Take one thick slice of locally-made oat toast.
Place locally-made goat cheese rolled in paprika and garlic on top.
Cover with scrambled, salted and peppered eggs.
Place sliced roma tomatoes on eggs.
Top with basil, more salt and pepper.
Finish lunch with my favorite snack - Organic Chocolate Underground yogurt made by Stonyfield Farm topped with regular Cheerios for crunch. It's like having chocolate cheesecake without feeling bad about it. Should you ever feel bad about cheesecake.
